Last night on Long Island, we told Grandma Grace we had to cater dinner. “For how many?” she asked. Only 700! Va bene.

Grace’s catering team served up five varieties of meatballs and our much-revered Kale Parmigiano salad for a wonderful (and delicious) evening in support of the Glen Cove Chamber of Commerce.

Today is an exciting day at Graces. Chef Joe Trama, who’s cooked with our family for over 25 years, and who cooks for the neighborhood at @joechefscounter , is now the Culinary Director of our Store. Chef Joe is leading the change of our prepared foods department — where an ingredient and seasonally driven focus will translate to an even more delicious and healthier menu for our guests.

Last night in the Upper East Side, in-house Chef Joe Trama cooked a romantic feast for our neighbors. A four course prix-fixe menu that starts, as always, with Chef Joe shopping the store looking for what inspires him. He started with the main course — in-season Atlantic Salmon in a beurre blanc sauce, that, when cooked appropriately, is flaky and decadent. Next, he went over to the produce department and filled a basket up with our beautiful bosc pears. Those were to be poached in red wine and lathered in an easy, house made creme anglaise. Next, the hush puppies. Not a secret but definitely cute, these are Southern inspired arancini but made with cornmeal, zucchini, onions and an indulgent amount of Cajun spices.

As he was walking the store, he overheard a customer ask about pop-tarts, (we don’t have those) and he thought to himself, what would a Grace’s pop tart look like? He decided it’s our Atlantic salmon cooked en-croûte and stuffed with a lemon dill cream and layered on top of a sun dried tomato & pink peppercorn aioli. Romance! Last but not least, the ravioli. For this, he kept it beautifully simple. San Marzano tomato sauce, good & tangy chèvre, and some caramelized onions. A beautiful evening on the Upper East Side. Thanks to our neighbors for joining us for our private dinner at the counter.
